Made with a handful of pantry staples, these crispy Parmesan chickpeas are a healthy, salty, crunchy snack packed with 7 grams of protein and 5 grams of fiber per serving. They take only 5 minutes to prep and are great straight off the pan or on top of a salad or bowl.

These crispy Parmesan chickpeas are one of those recipes I make on repeat. They come together with just a handful of simple ingredients and five minutes of prep, and they’re packed with protein, fiber, and plenty of cheesy, Parmesan crunch.
I originally created this recipe as a nutritious alternative to croutons for these Smashed Chicken Caesar Tacos, but after eating several handfuls straight off the baking sheet, I realized they’re perfect for snacking, too.
Whether you’re looking for a healthy snack, a protein- and fiber-rich crouton alternative, or a crunchy topping for salads, grain bowls, wraps, or tacos, these Parmesan chickpeas won’t disappoint.
Why you’ll love this
- Simple pantry ingredients: Made with chickpeas, Parmesan, and a few everyday spices you probably already have on hand
- 5 minutes of prep: A simple, satisfying recipe that comes together quickly
- Kid-approved crunch: Crispy, cheesy, and straight-from-the-oven delicious—these are an easy way to win over picky eaters
Plant-forward perks
These chickpeas provide about 7 grams of protein and 5 grams of fiber per serving, helping keep you fuller longer—something most croutons or crunchy snacks lack.

Ingredients you’ll need
- Canned chickpeas: Drain and rinse well, then pat dry so they crisp instead of steam.
- Parmesan cheese: For the best coverage, use finely shredded Parmesan, as I found it clings to the chickpeas much better. A Microplane works especially well for creating a fine shred, but regular grated Parmesan will work if that’s what you have on hand.
- Kosher salt
- Garlic powder
- Black pepper
- Extra-virgin olive oil
Substitutions & modifications
Here’s how to make this recipe work—whether you need to swap ingredients, adjust for dietary needs, or want to boost the nutrition even more.
Ingredient Swaps
- Kosher salt: If using fine salt, reduce the amount by ¼ to ½ teaspoon.
- Parmesan: If you prefer to use grated Parmesan, use about ⅓ cup.
Dietary adaptations
- Vegan/Dairy-free: Sub an equal amount of nutritional yeast
Upgrades
- Everything bagel seasoning: Add ~2 teaspoons along with the other seasonings
- Red pepper flakes: A pinch adds heat if you like things spicy.
- Fresh herbs: Toss with chopped rosemary, parsley, or chives after baking for added freshness.
Helpful tools & equipment
Here’s what you’ll need to make this recipe:
- Baking sheet
- Parchment paper (I love these parchment sheets)
- Microplane or fine grater for the Parmesan
- Medium bowl for tossing
Tips for the best Parmesan chickpeas
- Use a Microplane for the Parmesan: Finely grated Parmesan clings to the chickpeas far better than pre-shredded, giving you more flavor in every bite.
- Dry the chickpeas thoroughly: Pat them completely dry with a towel before seasoning—any extra moisture steams the chickpeas instead of crisping them.
- Don’t skip the halfway shake: Stirring at the halfway mark helps them crisp evenly on all sides.
- Let them cool before storing: Cooling on the pan for a few minutes helps lock in the crunch.

Serving ideas
- Sprinkle over these Smashed Chicken Caesar Tacos.
- Add crunch to a Caesar salad in place of croutons, especially alongside this high-protein, healthy Caesar salad dressing.
- Stir into a bowl of creamy tomato or butternut squash soup.
- Pack them into a snack container for lunchboxes or road trips.
- Serve alongside hummus and veggies for a protein-packed appetizer spread.
- Eat them straight off the pan while they’re still warm—no judgment here!
How to store crispy chickpeas
Allow chickpeas to cool completely before transferring to an airtight container. Store in the refrigerator for up to 7 days for the best texture.
Reheating
Reheat in a 350°F oven or air fryer for 3–5 minutes to bring back the crunch before serving.

Crispy Parmesan Chickpeas
- Total Time: 35 minutes
- Yield: 8 servings 1x
- Diet: Flexitarian, Gluten-Free, Low-Carb, Vegetarian
Description
These crispy parmesan chickpeas are a quick, pantry-friendly snack packed with plant-based protein and fiber, perfect for snacking or topping salads.
Ingredients
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 cup (32 g) finely shredded Parmesan cheese (see Notes)
- 1 1/2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon freshly ground black pepper
- 1 1/2 tablespoons extra-virgin olive oil
Instructions
- Prepare the oven & baking sheet: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Dry the chickpeas: Lay a clean kitchen towel or paper towels on a second baking sheet. Add the 2 (15-ounce) cans chickpeas and pat dry.
- Mix the seasoning: In a small bowl, combine the 1 ½ teaspoons kosher salt, 1 teaspoon garlic powder, 1 teaspoon black pepper, and 1 cup (32 g) finely shredded Parmesan cheese. Stir well to combine.
- Season the chickpeas: In a medium lidded bowl, combine the chickpeas, 1 ½ tablespoons olive oil, and the seasoning mixture. Cover and shake to coat evenly. Try not to eat them all before you cook them — they’re dangerously good just plain.
- Bake: Transfer the seasoned chickpeas to the prepared baking sheet and bake for 45-60 minutes, until golden and crispy, shaking once or twice to help them crisp evenly.
Notes
Parmesan cheese: I recommend using a Microplane to finely shred the Parmesan, as it clings more evenly and firmly to the chickpeas.
Salt: If using fine salt instead of kosher, reduce the amount by ¼ to ½ teaspoon.
