This healthier cheeseburger pasta uses half the beef of Hamburger Helper, with canned lentils and mushrooms to stretch the meat, and whole wheat pasta to add even more protein and fiber. Ready in under 40 minutes in one pot, each creamy, cheesy serving packs nearly 30 grams of protein and 10 grams of fiber. You’re going to love it!

Every once in a while, I get a very specific craving, and last week it was for a bowl of creamy, cheesy, beefy pasta—reminiscent of the Hamburger Helper we grew up with, but naturally, with more plants.
Since it was just the kids and me with the hubs out of town for work, I went for it—but to be honest, I wasn’t sure how it would go over. I slid the kids’ bowls across the kitchen island and turned fully around so as not to stare as they took their first bites.
Noah (age 10) gave me his adorably honest review: “Mom, this isn’t as bad as I thought!” And then proceeded to devour the entire bowl. 😂
This recipe is one of those reliable weeknight dinners everyone loves—maybe me the most because it’s a quick, comforting, one-pot meal packed with more nutrition.

Why you’ll love this healthier hamburger pasta with cheese
- Quick, one-pot meal: This dish comes together in just under 40 minutes, with the pasta cooking right in the pot to streamline cooking and cleanup.
- Kid-friendly: Mild flavors and a creamy cheese sauce make it an easy sell, and the lentils and mushrooms blend right in.
- High in protein and fiber: Each serving has almost 30 grams of protein and 10 grams of fiber, so it keeps everyone full.
Plant-forward perks
- Half the beef: Canned lentils and mushrooms stretch the meat in this dish while adding plant-based protein and fiber, keeping the flavor and texture hearty.
- Extra veggies: Finely diced mushrooms and onion cook down into the beef, adding savory depth and bulk so you won’t miss the meat.
- Big fiber boost: Lentils and whole wheat pasta deliver 10 grams of fiber per serving, compared to less than 2 g for an equivalent-size portion of the boxed version.

Ingredients you’ll need
- Lean ground beef: 90/10 or 85/15 both work
- White mushrooms: Diced fine so they blend right in
- Onion
- Paprika
- Garlic powder
- Kosher salt
- Black pepper
- Beef broth
- Canned lentils
- Whole wheat pasta: Cavatappi, rotini, shells, or any other medium-sized pasta will do
- Whole milk
- Cheddar cheese: Freshly shredded is best, as pre-shredded contains anti-caking agents that can affect melting
Substitutions & modifications
Here’s how to make this recipe work—whether you need to swap ingredients, adjust for dietary needs, or want to boost the nutrition even more.
Ingredient Swaps
- Ground meat: Ground turkey or chicken can be substituted in place of the beef
- Broth: Vegetable or mushroom broth can be used instead
- Pasta: Any medium shape works. Cooking times vary, so reference the al dente cooking time on the package
- Milk: 2% milk can be used in place of whole milk
- Cheddar cheese: Any good melting cheese works, including Monterey Jack, Colby Jack, Gruyère, or a blend of these.
- Kosher salt: If using fine salt, reduce the amount by ¼ to ½.
Dietary adaptations
- Vegetarian: Use vegan ground meat instead of beef, and vegetarian beef broth.
- Gluten-free: Use gluten-free pasta and broth.
Upgrades
- More veggies: Sauté some zucchini with the onion and mushrooms, or stir in 2 cups of baby spinach at the end until wilted.
- Mexican-inspired: Swap the paprika and garlic powder for an equal amount of taco seasoning—just reduce the salt a bit if your taco seasoning is salted. My Vegan Taco Seasoning works great here!

Tips for the best healthier cheeseburger pasta
- Dice the mushrooms finely: If your humans don’t love mushrooms, dice them super small, and they’ll basically disappear into the ground beef mixture as they cook.
- Shred your own cheese: Pre-shredded cheese contains anti-caking agents that can affect meltability and texture. Freshly shredded is best!
- Don’t overcook the pasta: Stir in the cheese and milk a smidge before the pasta reaches al dente. The pasta will continue cooking as the cheese sauce comes together.
- Let it rest: Cover the pot and allow it to rest for 5 minutes to let the sauce thicken slightly before serving.
Step-by-step instructions

Serving ideas for cheeseburger pasta
This dish can totally stand on its own—it’s hearty, creamy, and veggie-packed enough to count as an all-in-one meal in my book. But if you’re looking to round it out or stretch it a little further, here are a few ideas:
- Green side: Goes great with roasted or steamed broccoli, or a crisp salad with a lemony dressing to balance the richness.
- Raw veggies: I always put out some raw veggies for the kids to graze on while this cooks—things like baby carrots, cucumber slices, cherry tomatoes, bell pepper, or snap peas
- Cheeseburger style: Top with chopped dill pickles or relish for a burger-inspired bowl
- For the adults: Add your favorite hot sauce, pickled jalapeños, or extra black pepper to take it up a notch
How to store and reheat healthier Hamburger Helper
Refrigeration
Store leftovers in an airtight container in the refrigerator for up to 5 days.
Freezing
I don’t recommend freezing leftover cheeseburger pasta. The pasta turns soft after thawing, and the cheese sauce can separate and turn grainy.
Reheating
Stovetop: Combine pasta in a saucepan with a splash of milk, broth, or water. Cover and warm over medium-low heat, stirring occasionally, until warmed through.
Microwave: Add a splash of milk, broth, or water. Cover and heat in 1-minute intervals at 80% power, stirring between each interval, until warmed through.

Healthier One-Pot Cheeseburger Pasta
- Total Time: 40 minutes
- Yield: 8 servings 1x
- Diet: Flexitarian
Description
This healthier cheeseburger pasta uses half the beef of boxed Hamburger Helper with canned lentils and mushrooms to stretch the meat, and whole wheat pasta to add even more protein and fiber.
Ingredients
- 8 ounces lean ground beef (90/10 or 85/15)
- 8 ounces white mushrooms, cleaned and finely diced (about 2 cups)
- 1 medium yellow onion, diced (about 2 cups, 250 g)
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
- 4 cups beef broth
- 1 (15-ounce) can lentils, drained and rinsed (about 1 1/2 cups)
- 16 ounces medium-size whole wheat pasta like cavatappi, rotini
- 1 cup whole milk
- 3 cups (330 g) freshly shredded sharp cheddar cheese
Instructions
- Cook the beef, onion, and mushrooms: Heat a Dutch oven or large pot over medium heat. Add the 8 ounces lean ground beef, 8 ounces white mushrooms, 1 medium diced onion, 2 teaspoons paprika, 2 teaspoons garlic powder, 1 teaspoon kosher salt, and ½ teaspoon freshly ground black pepper. Cook, stirring frequently and breaking up the beef, until the beef is browned and the onion and mushrooms are tender, about 7-10 minutes.
- Add the broth and lentils: Pour in the 4 cups beef broth and add the 1 can lentils (drained and rinsed). Increase the heat to high and bring to a boil.
- Cook the pasta: Stir in the 16 ounces whole wheat pasta, making sure it’s covered with liquid, and cover the pot. Return to a boil, then reduce the heat to medium-low and simmer until the pasta is barely al dente, 9-11 minutes, stirring once or twice to ensure even cooking.
- Stir in the milk and cheese: Reduce the heat to low. Stir in the 1 cup whole milk and 3 cups freshly shredded cheese until the cheese is fully melted and most of the remaining liquid has been absorbed. Cover and let sit for a few minutes, until the sauce thickens slightly. Season to taste with additional salt and pepper, and serve.
Notes
- If using fine salt, reduce the amount by ¼ to ½.
- Freshly shredded cheese melts more smoothly than bagged shredded cheese.
