Crispy on the outside and juicy on the inside, these smashed chicken Caesar tacos make an easy, high-protein dinner the whole family will love. Parmesan-seasoned chicken is smashed onto tortillas, seared until golden, then topped with Caesar salad, crispy chickpeas, and a generous sprinkle of Parmesan. Meal-prep friendly and ready in under 30 minutes!

I’m a sucker for a taco, but when smashed chicken Caesar tacos started popping up in my Instagram feed a few weeks ago, I was a bit caught off guard.
Salad in a taco? Why have I not thought of this before?
Naturally, I had to make my own version to max out the nutrition and even more plant-forward goodness.
To boost the Caesar flavor while keeping the ingredient list short, I seasoned the ground chicken with Parmesan instead of salt. For the salad, I tossed together chopped romaine, Parmesan, and my go-to healthy Caesar salad dressing, made with cottage cheese. Then I topped it all with these crispy Parmesan chickpeas for extra crunch, fiber, and plant-based protein.
I don’t often pat myself on the shoulder, but both kiddos and the hubs (my official recipe testers) gave these two enthusiastic thumbs up after the very first bite.
If your family loves taco night as much as mine, this is a fun, plant-forward addition to your rotation. I hope you love them!

Ingredients you’ll need

Substitutions & modifications
Here’s how to make this recipe work—whether you need to swap ingredients, adjust for dietary needs, or want to boost the nutrition even more.
Ingredient Swaps
- Ground chicken: Ground turkey also works in place of ground chicken; use the same quantity and method
- Romaine: Sub in kale for a heartier green
- Crispy chickpeas: Crushed pita chips or croutons work great as well
Dietary adaptations
- Gluten-free: Use corn or gluten-free tortillas in place of flour
- Dairy-free: Replace the Parmesan with nutritional yeast (start with less and adjust to taste), and use a dairy-free Caesar dressing.
Upgrades
- Bulk up the Caesar salad with extra veggies: Chopped cucumber, cherry tomatoes, or bell pepper will add extra crunch and color
- Add a pinch of red pepper flakes to the chicken mixture for a little heat
- Finish with lemon zest and extra cracked black pepper for brightness
- Double up on the crispy chickpeas for more protein and fiber in every bite
Time-saving tips
- Prep ahead: Make the chicken mixture and chop the Romaine (and any extra veggies you’re adding) up to 3 days in advance
- Skip the chopping: Grab a bagged Caesar salad kit (or two!) if time is tight
- Dressing shortcut: Whip up a batch of this healthy Caesar salad dressing ahead of time, or use store-bought

For the tacos:
- A griddle or large skillet (I love using my Lodge cast iron skillets for these)
- Parchment paper (cut into a large square), for pressing the chicken into an even layer
- Spatula for flipping the tacos
For the salad:
- Cutting board
- Chef’s knife
- Large mixing bowl
- Tongs for mixing and serving
Step-by-step instructions

Season the chicken

Press chicken onto tortillas

Toss romaine with Caesar dressing

Sear chicken-side down

Flip and brown the other side

Top with salad and chickpeas
Tips for the best chicken Caesar tacos
- Press the chicken thin: A thin, even layer crisps up faster and cooks more evenly.
- Use parchment or wax paper to press: This will prevent the meat from sticking to your fingers.
- Toss the salad right before serving: Dressed romaine gets soggy fast, so I like to wait to mix it until I’m about to cook the chicken.
- Use a hot pan: You want the meat to sear and get a nice brown crust.
How to store smashed chicken tacos
Refrigeration
Store the cooked chicken tortillas and dressed salad separately; the tortillas keep for up to 5 days, and the salad is best within 1 day. Reheat the tortillas in a skillet over medium heat until warmed through, then top with fresh salad.
Freezing
The raw chicken mixture can be frozen for up to 3 months. Thaw meat overnight in the fridge, then press onto tortillas as outlined in Step 2 and follow remaining instructions. I don’t recommend freezing cooked tacos.

- Diet: Flexitarian
Description
These smashed chicken Caesar tacos are an easy, high-protein dinner the whole family will love. Meal-prep friendly and ready in under 30 minutes!
Ingredients
- 1 pound (450 g) ground chicken
- 1/2 cup (55 g) freshly grated Parmesan cheese, plus more for serving
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper
- 9 cups chopped Romaine lettuce (about 1 heart or 1/2 of a 600 g head)
- 1/3 cup healthy Caesar dressing, plus more for serving
- 1 tablespoon avocado oil (or other high-heat, neutral-flavored oil), divided
- 8 6-inch flour tortillas (fajita size)
- 1/2 cup (70 g) crispy chickpeas (store-bought or these Crispy Parmesan Chickpeas)
Instructions
- Season the chicken: In a medium bowl, combine 1 pound ground chicken, ½ cup Parmesan cheese, 1 teaspoon garlic powder, and ½ teaspoon freshly ground black pepper. Mix by hand until fully combined
- Prepare the tacos: Spoon about 2 ounces (a generous 3 tablespoons) of the chicken mixture onto the center of each of the 8 tortillas. Cover with a small piece of parchment paper and press toward the edges into a thin, even layer that covers most of the tortilla.
- Mix the Caesar salad: In a large bowl, combine ⅓ cup Caesar dressing and 9 cups chopped Romaine lettuce. Toss until evenly coated and set aside.
- Cook the tacos: Heat a large griddle or skillet over medium-high heat. Lightly brush with oil. Working in batches, place the tortillas, chicken-side down, in the skillet and cook for 3 minutes, until the chicken is cooked through and well browned. Flip and cook the other side until browned, 30 to 60 seconds. Remove and repeat with the remaining tortillas, brushing the pan with more avocado oil as needed. Reduce heat to medium if tortillas begin to burn.
- Assemble: Top each taco with ¼ cup Caesar salad, 2 tablespoons crispy chickpeas, Parmesan cheese, and extra dressing, if desired. Fold and enjoy immediately.
