Description
This healthy Caesar salad dressing uses cottage cheese instead of traditional mayonnaise. It’s creamy, high-protein, and has all the classic Caesar flavor you love.
Ingredients
- 3/4 cup (170 g) 4% milkfat cottage cheese
- 1/3 cup (35 g) freshly grated Parmesan cheese
- 2 1/2 tablespoons fresh lemon juice (from about 1 medium lemon)
- 2 cloves garlic, chopped or pressed
- 1 1/2 teaspoons Worcestershire sauce (gluten-free and vegan if needed)
- 1 teaspoon mustard (yellow, Dijon, or brown)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1-2 tablespoons water, to thin, more if desired
Instructions
Blend the base: Add the ¾ cup cottage cheese, ⅓ cup Parmesan, 2 ½ tablespoons lemon juice, 2 cloves garlic, 1 ½ teaspoons Worcestershire sauce, 1 teaspoon Dijon mustard, ½ teaspoon salt, and ½ teaspoon black pepper to a blender, food processor, or tall cup for an immersion blender. Blend until completely smooth, scraping down the sides as needed, until no visible cottage cheese curds remain.
Thin and adjust: Stir or blend in 1 tablespoon water until the dressing reaches a pourable consistency. If it’s still too thick, add more water, 1 tablespoon at a time, until it reaches your desired consistency.
